Does anyone know if they automatically add another year for Covid-19? Nijel Pack played at KSU both the 20-21 and 21-22 seasons. He played at Miami the 22-23 (still playing) season, yet their roster shows him as a sophomore???

Yes...it's my understanding that any player on a team in 2020 was automatically granted that extra year. As a result most teams show them classified a year behind their actual standing. Case in point, Jalen Wilson.
2019-2020: medical redshirt after breaking his ankle(?)
2020-2021: Redshirt Freshman (Covid "freebie")
2021-2022: Third year in program but technically still a freshman due to Covid
2022-2023: Fourth year in program but technically still a Sophomore.
Explains why I heard HCBS mention during an interview earlier this season that JWill still had 2 more years of eligibility if he wanted to stay. I thought he had miscounted but no...
All that said, it's my understanding (perhaps wrong) that last year (2021-2022) was the last year that teams carrying Covid holdovers did not have to count their scholarship against the team limit. As an example David McCormack could have stayed another year but KU would have had to give up a scolly to keep him. I believe the same would be true for Kevin McCullar if he elects to stay (which we've all been told ain't gonna happen)

After rewording for technical reasons, you are correct here as well, USAF. The only reason the NCAA allowed the “no count” COVID-19 schollies for the first year of their use was to be fair to programs — and players —who had no time to adjust their rosters - or decisions - for the late ruling. The NCAA even offered to help programs that could not come up with the $$$ to fund the extra scholarships for that first year.
The following years the programs have had time to adapt, so the COVID-19 eligibility scholarships will count the same as any other.
